רביולי פוטנסקה - Ravioli alla Puttanesca






















לבצק:
200 גרם קמח פסטה
7 חלמונים
1/2 כפית מלח


לקערה עם הקמח מוסיפים את החלמונים והמלח ומערבבים. לשים את הבצק לבצק חלק וקשה. עוטפים בניילון נצמד ומעבירים למקרר.


למילוי:
6 עגבניות לחות נקיות מקליפה וגרעינים, אפויות במלח ושמן זית. שעה וחצי ב 150 מעלות. קצוצות לאחר האפייה.
פלפל אדום אחד קלוי וקצוץ
2 עגבניות טריות ללא גרעינים וקליפה - קצוצות
זסט מלימון אחד
15 זיתי טאסוס מגולענים וקצוצים
2 ענפי טימין
כמה שיותר פרמז'ן מגוררת


מערבבים את כל המרכיבים לעיסת מילוי אחידה.


מוציאים את הבצק מקירור אחרי שעה. משטחים ומעבירים במכונת פסטה מעובי מספר 1 עד עובי מספר 8 בהדרגה. 
קורצים עיגולים בעלה הבצק בעזרת חותכן או כוס. מניחים כפית מילוי באמצע עיגולי הבצק. עם האצבע מרטיבים את השוליים במים ומקפלים. מהדקים היטב את חיבורי השוליים.
מקמחים כל רביולי היטב למניעת הדבקות עד הבישול. מרתיחים סיר עם מים.


לרוטב:
במחבת, מחממים שמן זית. מוסיפים חצי בצל קצוץ, שן שום קצוצה, מיץ מלימון אחד, עלים מארבעה ענפי טימין, מעט מלח ובסוף גם 20 גרם חמאה.


מעבירים את הרביולי למים הרותחים ומבשלים 3-4 דקות.
מעבירים את הרביולי המוכנים למחבת הרוטב, עוטפים את הרביולי ברוטב מעבירים לצלחת ומגישים עם פרמז'ן מעל.


סלט עגבניות
עגבניות קטנות מהמרפסת של אור, שמן זית, מלח ופרחי זוטא לבנה מאותה מרפסת.

The Dough:

200 GR pasta flour
7 egg yolks
1/2 tsp salt

Mix the flour, egg yolks and salt in a large bowl. Knead until receiving a firm and smooth dough. Wrap with cling foil and place in refrigerator.  

The Filling:

6 marinated sun dried tomatoes, pealed and deseeded, baked (1 1/2 hours) and finely diced.
1 grilled and diced red pepper.
2 fresh tomatoes, pealed, deseeded and finely diced.
1 lemon zest.
15 Thassos olives, pitted and finely diced.
2 thyme stems.
Grated Parmigianino-Reggiano cheese (the more the merrier).

Remove the dough from the fridge after an hour. Flatten and then run through a pasta machine starting with thickness level 1 and gradually make your way up to 8. Extract circles from the leaf like dough using a glass or a special ravioli cutter. After that, place a teaspoon of filling in the center of each circle. Wet the rim of each circle with your fingers and then fold into half. Make sure you tighten both rims to each other.
Flour each prepared ravioli separately in order to prevent them sticking together.

The Sauce

Worm up some olive oil in a frying pan. Finely dice half an onion and add it to the oil. Then add one crushed clove of garlic, lemon juice from one lemon, leaves from 4 stems of thyme, a bit of salt and at the end, 20 GR of butter.

Cook the ravioli in boiling water for 3-4 minutes.
Place the ravioli in the pan with the sauce, stir and serve with grated Parmigianino-Reggiano

הפסטה של מגי - Maggie's Pasta


מי שעוקב, בטח שם לב שכבר אפיתי עוגה ולחמניות על פי מתכון של מגי. הסיבה שאני כל כך אוהבת את הבלוג והמתכונים שלה היא האמינות והכנות. יש תחושה שכל מתכון נוסה ונוסח בהקפדה ומוגש לעולם אחרי מחשבה רבה. כשפגשתי אותה בצהריי יום שישי פה בסטודיו בפעם הראשונה, הבנתי שכל המחשבות המוקדמות שלי היו מוצדקות. מגי היא מומחית אוכל איטלקי מדופלמת.
קיבלתי הסבר מפורט ודקדקני על הכנת בצק לפסטה. כולל הסבר על טחינת הקמח ועל סוגי פרמז'ן. את סוף השבוע ביליתי בלבלוס את הרביולי שהכינה ולרשימת הקניות נכנסה גם מכונת פסטה.
המילוי היה תרד, ריקוטה, שום, מלח ופלפל. לקינוח, היא הקציפה שמנת מתוקה עם פסיפלורה שקטפה מהעץ שבחצר שלה. הקפיאה בתוך תבנית שקעים וכשגמרנו לצלם ולאכול היה לנו חטיף קריר ומעודן.












If you track the blog, you might have noticed that I have baked a cake and some rolls according to Maggie's recipe. The reason I like her blog and recipes so much is the accuracy and honesty. There is a feeling that every recipe was tried and worded meticulously and presented to the world after lots of thought. When I met her for the first time on a Friday afternoon here in my studio, it came to me that all my thoughts were true. Maggie is an authorized expert for Italian food.
I received and exact and accurate explanation on how to make pasta dough, Including an explanation on grinding methods for flour and on different types of Parmigiano cheese. I spent the weekend eating all the ravioli she made and added a pasta machine to my shopping list.
The filling for the ravioli was spinach, ricotta cheese, garlic, salt and pepper. For dessert, Maggie whipped some sweet cream with passion fruit she collected from her garden. She let it freeze in the freezer and when we finished eating and photographing, we had a cool and smooth snack.
